In early spring, when the ground begins to thaw, the birch trees begin to give sap. Only fresh sap can be boiled into syrup, so its creation must fit into a specific seasonality and weather. On average, 110 liters of birch sap are needed to make one birch syrup.
Birch syrup is an excellent addition to meat dishes, salads, cheeses.
